I love fall for many reasons: the beautiful colors of the leaves, football season (of course), wearing big comfy sweaters…but most of all, my slow cooker! There is nothing better than coming home from a long day at work to a house that is warm and smells of delicious food. The great thing about slow cookers is that it is virtually impossible to screw anything up. I have so many favorite recipes but I guess the one that really hits the spot is my hearty beef stew.

Ingredients:

3 pounds cubed beef stew meat
1/4 cup all-purpose flour
1/2 teaspoon salt, or to taste
3 tablespoons olive oil
1 cup baby carrots
4 large potatoes, cubed
1 tablespoon dried parsley
1 teaspoon ground black pepper
2 cups boiling water
1 (1 ounce) package dry onion soup mix
3 tablespoons butter
3 onions, sliced
1/4 cup red wine
1/4 cup warm water
2 tablespoons all-purpose flour
