Bourbon is American whiskey aged in charred new oak barrels containing at least 51% corn in the mash. Whisky, spelled without the ‘e’, refers to whiskies made in Canada, Scotland, or Japan. Each country has strict rules around how their whiskies are produced, resulting in distinct differences you’ll love to discover. With the exception of Pendleton® 1910 Bourbon, Pendleton® Whisky is classified as Blended Canadian Whisky. The rules for making Canadian whisky allow a mix of grains, a minimum of three years of aging in small wood barrels, and a minimum of 40% alcohol by volume (ABV).

If whisky is stored properly, it can be enjoyed for a long time. We recommend consuming whisky within two years after opening. Still, as long as it’s stored upright in a cool, dark place and not exposed to sunshine, excessive temperature shifts, or vibrations, you’ll be able to enjoy it for many years.
Proper whisky storage is essential to maintain the spirit’s integrity and to preserve its subtle nuances over time. Ideally, store your bottles in a cool, dark place, avoid direct sunlight and temperature fluctuations, and ensure every bottle has a good seal. Decanters are not a long-term storage solution as the stoppers do not provide a good seal and may oxidize the spirit quickly.
Whisky is best tasted neat, at room temperature, in Glencairn nosing glasses or rocks glasses. Preparing your palate for the best whisky enjoyment is paramount; avoid consuming excessively hot or cold drinks, spicy foods, bitter food or drink, or strongly flavored cured meats beforehand, as they may interfere with your perception of the spirit.
Pendleton® Whisky uses simple ingredients. We choose the finest Northern rye, barley, corn, and wheat sourced from select farms, milled and blended with pure glacier-fed water from Mount Hood. Yeast is added to start the fermentation, and the final distillate is cut with Mount Hood water to bring it to proof.
Pendleton® Whisky is blended Canadian whisky. By law, it must be aged a minimum of three years in a barrel before bottling, but it’s likely that some of the whiskies in the blend are much older. The longer a spirit ages in a barrel, the more complex the flavors become, making barrel maturation one of the most critical steps in producing a whisky of character. Some Pendleton® Whiskies, like our 1910 Rye, contain whiskies aged a minimum of 12 years in cask. When you see an age designation on the bottle, you can rest assured that the youngest whisky in the blend is that age.
